pEMTurkey Gumbo Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP2 tbsp Margarine1/2 lb Fresh or frozen okra 1" pcs.2 cup Chopped celery1 medium Onion, chopped1 small Sweet green pepper, chopped2 Garlic cloves, minced8 oz Can tomato paste4 Ripe tomatoes peeled OR16 oz can peeled tomatoes2 cup Water2 cup Chopped cooked turkey3/4 tsp Gumbo file powderCooked rice/pPreparation: PMelt the margarine in a large skillet. Add the okra. Saute untilthe okra loses its shiny appearance, about 5 minutes. Remove theokra pieces to a bowl. Add the celery onion, green pepper, andgarlic to the skillet.Cook over medium heat until the onion is transparent. Add the tomatopaste, tomatoes, water, okra mixture, and turkey. Cook over low heat10 minutes or until turkey is hot. Add the file powder. Stir toblend.
