pEMTuna Melt Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP1 cup chunk white tuna in water, drained2 tbsp mayonnaise1 egg, (or egg sub)1/4 cup milk4 slice swiss cheese4 slice wheat bread/pPreparation: PCombine chuck white tuna with mayonnaise. Beat together egg and milk andset aside. Place a slice of swiss cheese on each 2 slices of bread wholewheat bread. Spread each piece of bread with tuna mixture, then addanother slice of swiss cheese, then rest of tuna mixture. Top each sandwichwith another slice of whole-wheat bread. Place each sandwich in theegg-and-milk mixture for 2 minutes, then turn and soak the other side. Melt2 tb unsalted butter in skillet. Cook sandwiches, cover for 3 minutes; thenand cook uncovered for 3 more minutes.
