Sweet Potato Pie Recipe

li3 tbsp margarine/li
li1/4 cup sugar/li
li1/4 tsp salt/li
li1 egg yolk/li
li3 tbsp lemon juice/li
li1 tsp lemon peel/li
li1/4 tsp cinnamon/li
li3 large sweet potatoes, cooked and mashed/li
li1 cup skim milk/li
li3 egg whites, beaten stiff/li
li1 9-inch unbaked pie shell*/li
p*Note: To reduce saturated fat, use a homemade pie shell made with vegetable oil./p
liHeat oven to 350 F./li
liBeat together margarine, sugar and salt. Add egg yolk, lemon juice, lemon peel and cinnamon. Stir in sweet potatoes and milk. Mix well./li
liFold in egg whites. Pour into pie shell. Bake for 40 to 50 minutes or until knife inserted in center comes out clean./li
liCut into 8 slices./li
