Spiced Rice Pilaf Recipe

pEMSpiced Rice Pilaf Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP1 cup Brown basmati rice1 tbsp Vegetable oil1 small Onion, chopped1 cl Garlic, minced4 Whole cloves1/8 tsp Salt2 cup Chicken broth broth1 Cinnamon stick1 tsp Vegetable oil1 tbsp Raisines1 tbsp Almonds, blanched slivered =OR=-1 tbsp Pine nuts/pPreparation: PSoak rice 2 hours to shorten cooking time. Rinse and drain. In alarge non-stick saucepan, heat 1 tablespoon, heat 1 tablespoon oiland saute onion and garlic until tender, 2 to 3 minutes. Add clovesand cook 1 minute. Add rice and stir to coat. Add salt, broth andthe cinnamon stick. Bring to a boil. Cover, reduce heat and simmer20 to 25 minutes, until liquid is absorbed. Discard cinnamon stick.Heat 1 teaspoon oil; add raisins and almonds and warm. Mix with riceand serve.
