Scalloped Corn Recipe

pEMScalloped Corn Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP2 cup corn, fresh, cut from cob2 eggs, slightly beaten1/4 cup green pepper, minced1/2 tsp salt1 cup cracker crumbs, divided2 tbsp butter, divided2/3 cup half-and-half1 paprika1 parsley, opt./pPreparation: PCombine corn, eggs, green pepper, and salt; mix well. Spoon half ofmixture into a greased 1-1/2 quart casserole. Sprinkle with half ofcracker crumbs, and dot with 1 tablespoon butter. Repeat layers; pourhalf-and-half over top.Bake at 325 degrees for 30 to 35 minutes. Remove from oven, and sprinklewith paprika.
