A Delicious Oatmeal Blueberry Muffins Diabetic Recipe

Serves 12

Ingredients

  • 1 cup all purpose flour (1/2 cup whole-wheat, 1/2 cup white flour)
  • 1 cup skim milk
  • 3/4 cup uncooked regular oats
  • 1 egg
  • 1 tbsp baking powder
  • 1/4 cup vegetable oil
  • 2 tbsp sugar sub. (or equivalent of 2 tbsp reg. sugar)
  • 1 cup fresh blueberries
  • 1/2 tsp salt
  • 1 vegetable cooking spray
  • 1 tsp ground cinnamon

Preparation

  1. Combine flour, oats, baking powder, sugar substitute, and salt in a medium bowl.
  2. Make a well in center of mixture.
  3. Combine milk, egg, and oil; add to dry ingredients, stirring just until moistened.
  4. Gently fold in blueberries.
  5. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
  6. Sprinkle cinnamon over muffins, and bake at 425 F for 20 to 25 minutes or until lightly browned.
