Family Turkey Loaf Recipe

liOlive oil cooking spray /li
li¾ cup minced onion /li
li¾ cup minced scallion, (including some of green ends) /li
li1/2 cup minced celery /li
li1/2 cup minced carrot /li
li1/4 cup minced green bell pepper /li
li1/4 cup minced red bell pepper /li
li2 cloves garlic, minced /li
li1/2 teaspoon salt (optional) /li
li1/4 teaspoon cayenne pepper to taste /li
li1 teaspoon freshly ground pepper /li
li1/2 teaspoon ground cumin /li
li1/2 teaspoon ground nutmeg /li
li1/2 cup evaporated skim milk /li
li1/2 cup low-sodium ketchup /li
li2 pounds ground turkey breast/li
li2 large eggs, beaten /li
li2 large egg whites /li
li½ cup dry bread crumbs/li
li¼ cup oatmeal /li

liPreheat oven to 350 degrees. /li
liSpray a large nonstick skillet with cooking spray. /li
liAdd onion, scallion, celery, carrot, bell peppers, and garlic. /li
liSauté over low heat until vegetables are tender and liquid is absorbed, about 10 minutes. /li
liCool and set aside. /li
liMeanwhile, combine salt, cayenne, pepper, cumin, and nutmeg. /li
liAdd to vegetable mixture. /li
liStir in evaporated skim milk, ketchup, turkey, eggs, egg whites, oatmeal, and bread crumbs. /li
liMix well. Form into a loaf and place in a baking dish lightly sprayed with cooking spray. /li
liBake 45 to 50 minutes. /li
liRemove from oven and pour off all fat. /li
liLet stand for 10 minutes before slicing. /li
