Low-carb Falafel with Tahini Sauce

li1 medium head cauliflower, florets only/li
li1/2 cup slivered almonds/li
li1 Tbsp ground cumin/li
li1/2 Tbsp ground coriander/li
li1 tsp kosher salt/li
li1/2 tsp cayenne pepper/li
li1 clove garlic, minced/li
li2 Tbsp fresh parsley, chopped/li
li2 large eggs/li
li3 Tbsp coconut flour/li
listrongTahini Sauce/strong/li
li2 Tbsp tahini paste/li
li4 Tbsp water/li
li1 Tbsp lemon juice/li
li1 clove garlic, minced/li
li1 tsp salt/li
liPuree the cauliflower florets in a food processor until grainy. (You should end up with about 1 cup.) Transfer to a medium bowl./li
liGrind the almonds in a food processor until grainy. Add to the cauliflower along with the remaining ingredients, except the ones for tahini sauce, and mix well./li
liHeat a 50/50 mixture of olive oil and grapeseed oil in a medium skillet until sizzling. Shape the cauliflower mixture into 8 three-inch patties while the oil heats./li
liFry four patties at a time until the edges are brown, about 4 minutes, then flip and cook the other side. Repeat with remaining four patties. Transfer the cooked patties onto a plate lined with paper towels to drain off excess oil./li
liIn a small bowl, combine the ingredients for the tahini sauce and mix well. Serve with the patties./li
