Falafel (Diabetic) Recipe

li3 cups garbanzo beans (chick peas), soaked and cooked if you purchase dry beans or straight from a can works just as well/li
li1 Tablespoon lemon juice /li
li1/2 cup onion, chopped /li
li2 Tablespoons whole wheat pastry flour/li
li1/4 cup wheat germ /li
li1/4 cup parsley, chopped/li
li1/4 cup sesame seed /li
li1/4 teaspoon pepper /li
li1/4 teaspoon garlic powder /li
li2 Tablespoon oil /li

liHeat oven to 350 degrees F. /li
liIn a food processor or blender grind garbanzo beans, lemon, and onion. /li
liScoop into bowl and add flour, wheat germ, parsley, sesame seed, pepper, and garlic powder. /li
liForm into 20 falafel balls. /li
liHeat oil in a large baking dish, add falafel, and bake 15 minutes, stirring occasionally. /li
