Diabetic Mock-Turtles Recipe

Yield 18

Ingredients:

  • 18 Pecan halves
  • 1/2 cup cold water
  • 1 package unflavored, sugar-free gelatin
  • 1/2 cup skim milk
  • 1 tbsp granulated sugar replacement
  • 1/2 tsp maple flavoring
  • 1 oz. diatetic chocolate coating

Preparation:

  1. place 1 pecan half in paper cupcake holder,inside muffin tin.
  2. Dissolve geletin in water for 5 minutes.
  3. Cook and stir over medium heat till it comes to a full boil. Boil 2 minutes.
  4. Remove from heat, stir in all but the chocolate.

  5. Blend well. Set aside until thick, syrup-like consistency.
  6. Spoon 2 tsp.over each pecan half, chill till firm
  7. Melt chocolate in double-boiler and divide evenly in each cup.
  8. Store in refrigerator.
