Ham and Cauliflower Casserole Recipe

Serves 6

Ingredients

  • 1 tbsp chopped onion (about 1/6 medium onion)
  • 3 tbsp margarine, divided
  • 2 tbsp all-purpose flour
  • 1/2 tsp salt
  • 1 tsp ground black pepper
  • 1 cup skim milk
  • 1/2 cup shredded low-fat cheddar cheese
  • 1 medium head cauliflower, cut into florets, boiled thoroughly and drained
  • 2 cups lean, unsalted ham, cubed and fully cooked
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 1 jar (2 ounces) pimientos, drained and diced
  • 6 saltine crackers, crumbled

Preparation

  1. In a large saucepan, sauté chopped onion in 2 tbsp of margarine over medium heat until tender. Stir in flour, salt and pepper until smooth. Gradually add the milk. Cook and stir mixture for 2 minutes or until contents are thick and bubbly.
  2. Remove pan from heat. Stir in cheese until melted. Gently mix in cauliflower, ham, mushrooms and pimientos.
  3. Pour contents into a greased 2-qt. casserole dish.
  4. In another small saucepan, cook cracker crumbs until brown in remaining butter and sprinkle over casserole. Cover casserole and bake at 350 F for 20 minutes. Uncover and continue to bake 5-10 minutes longer or until heated through.
