1 cup hot water1 liquid sugar sub. to equal 1 cup su, gar1 cup shredded wheat bran cereal2 cup nonfat buttermilk1/2 cup diet margarine2 eggs beaten2 1/2 cup all purpose flour2 cup wheat bran flakes cereal2 1/2 tsp baking soda1/2 tsp salt1 vegetable cooking spray

Preparation:

Pour hot water over shreds of wheat bran cereal; let stand at roomtemperature 10 minutes.Cream margarine and sugar substitute in a large bowl. Add buttermilk,eggs, and soaked bran cereal, beating well at medium speed of an electricmixer. Fold in wheat bran flakes cereal. Cover and store in refrigeratoruntil ready to bake. Batter can be store in fridge for up to 1 week.To bake, spoon batter into muffin pans coated with cooking spray, fillingtwo-thirds full.
