Creole Steak Recipe

Yield: 2 servings

Ingredients:

  • 2 pounds lean round steak
  • 1/4 cup wheat flour
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 1/2 teaspoon pepper
  • 3 Tablespoons extra virgin olive oil
  • 1 cup onion, chopped
  • 1/3 cup green pepper, chopped
  • 1 can (16 ounces) tomatoes
  • 1/2 cup raw brown rice
  • 1 cup low-sodium, fat-free beef broth
  • 1 cup water

Preparation:

  1. Cut steak into 7 equal pieces.
  2. Mix flour, salt, paprika, and pepper, dredge meat in mixture.
  3. Heat oil in a large frying pan.
  4. Lightly brown onions and green peppers and remove from oil.
  5. Brown meat in remaining oil.
  6. Cover meat with onions and green peppers.
  7. Cut up tomatoes and add with their liquid to meat.
  8. Sprinkle rice into pan. Add broth and water. Mix thoroughly.
  9. Bring to a boil, turn heat down, and cover tightly.
  10. Simmer 1 1/2 hours or until meat is tender, stirring occasionally.
