5 cup sliced wild mushrooms, see *1/4 cup dry sherry1/2 cup minced red onion1/4 cup low-fat low-sodium chicken broth1 tsp minced chives4 cup evaporated skim milk1/3 cup unbleached white flourfresh ground pepper

Preparation:

* (use shiitake, cremini, oyster, or regular white mushrooms, if wild arenot available)Combine the mushrooms, sherry, onion, and broth in a stockpot overmedium-high heat. Cook until mushrooms are browned, about 5 minutes.Add the chives and cook for 2 minutes. Add 3&1/2 cups of the milk. Lowerthe heat and simmer for 5 minutes.Combine the remaining 1/2 cup of milk and flour. Add to the soup, stirringuntil smooth and thick, about 4 minutes.
