2 cup (or 3) chopped fruit *1 tbsp vegetable oil1/2 tsp (to 1 tsp.) cinnamon or nutmeg1 ************cake************1 large egg1/4 cup vegetable oil2 tbsp milk1/2 cup unsweetened fruit juice **1 1/2 cup unbleached all purpose flour1/2 tsp baking powder1/2 tsp baking soda

Preparation:

* Use pineapple, banana, blueberries, peaches, etc.** Use apple, orange, or pineapple juiceCombine fruit, 1 T. oil and cinnamon or nutmeg in bowl. Toss together.Spoon into oiled 8" square baking dish. Set aside.Beat together egg, 1/4 cup oil, milk and fruit juice. Combine flour,baking powder and baking soda. Stir into juice mixture and beat untilsmooth. Pour batter evenly over fruit and smooth top. Bake at 350~F. for30 minutes. Cool to just warm and turn out onto a serving dish.
