FRUIT AND NUTS1/2 cup walnuts1 1/2 cup fresh or frozen cranberriesDRY INGREDIENTS2 1/2 cup unbleached white flour1 tsp cinnamon1 tsp baking soda1 tsp baking powder1/2 tsp saltWET INGREDIENTS1/2 cup fruit sweetener1/2 cup oil1/4 tsp grated orange zest2 eggs3 tbsp unsweetened orange juice1/2 tsp vanilla extract1 cup mashed ripe bananas

Preparation:

Preheat the oven to 350 degrees. Lightly spray two loaf pans with lecithinspray. Toast the walnuts in the preheated oven for 7-10 minutes, stirringoccasionally. Allow the nuts to cool. Then coarsely chop them with a knifeor using a pulsing action in a food processor, and put them aside. Wash andsort the cranberries, coarsely chop them with a knife or with the pulsingaction in a food processor and put them aside. Sift the dry ingredientstogether. Use an electric mixer on medium speed to whisk together thesweetener, oil, and orange zest, until thickened, about five minutes. Addthe eggs, one at a time beating well after each addition. Reduce speed andstir in the orange juice, vanilla and mashed bananas. On low speed, slowlyadd the sifted dry ingredients, walnuts, and cranberries. Mix just untilblended, being careful not to over mix. Pour the batter into the preparedloaf pans. Bake the loaves on the middle shelf in the preheated oven for50-60 minutes, until a toothpick inserted in the center of each loaf comesout clean. Cool the loaves slightly before removing them from the pans andcooling them on a wire rack. Wrap the cooled loaves in plastic wrap and letthem sit for a few hours to overnight at room temperature before slicing.
