Cowboy Cheeseburgers Recipe

Serves 4

Ingredients

  • 1 lb extra-lean ground beef
  • 1 small onion
  • 1 tbsp fresh jalapeno chili, minced
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper, fresh ground
  • 1 package sliced nonfat mozzarella cheese
  • 4 whole wheat tortillas
  • 4 tomato slices
  • cilantro sprigs
  • 1 tbsp commercial taco sauce

Preparation

  1. Mix the beef, onion, and jalapeno together; form into burgers of equal size about 1/4 inch thick without compacting the meat.
  2. Combine coriander, cumin, salt and pepper. Sprinkle the seasoning mixture of spices on both sides of patty.
  3. Grill or broil, 4" from source of heat, for 3 minutes on each side for medium-rare patties.
  4. Place the mozzarella cheese on center of each patty.
  5. Cook for another minute and until cheese melts.
  6. Serve each patty on a warmed 8" flour tortilla, topped with a tomato slice, cilantro sprigs, and taco sauce.
