Preparation:

Yield 12 servings - 1/2 C ea. Each serving may be exchanged for: 1Bread, 1 Low-Fat MeatCombine carrots, onion and margarine in non-stick skillet; cook onmedium heat until tender. Add mushrooms and cook 5 minutes; set asideCombine remaining ingredients, except parsley, in large bowl; stir incooked vegetables. Turn mixture into nonstick 2 Qt. casserole. Coverand bake at 350 for 30 minutes or until bubbly.
