Uncooked giblets, of 1 or 2 chickens6 3/4 cup Cold water1 1/2 tsp Salt or to taste1/8 tsp Fresh ground pepper3/4 cup Carrot, finely diced3/4 cup Onion, chopped3/4 cup Celery, finely chopped even the l9 oz (1 cn) tomato juice1 1/2 tbsp Parsley flakes, OR3 tbsp Fresh parsley, minced3/8 tsp Paprika3 tbsp Quick-cooking oatmeal

Preparation:

Wash giblets and discard all fat pieces. Place in a large cookingpot with water, and if you must, salt. Bring to a boil and simmerabout 25 minutes. Add all other ingredients except the oatmeal;simmer soup gently about 30 minutes more. Remove giblets and chopinto small pieces. Return giblets to soup; add oatmeal, stir, andsimmer 5 minutes.
