Chicken Dijon Pasta Salad Recipe

Yield: 4 servings

Ingredients:

  • 4 ounces whole-grain rotini, uncooked
  • 8 ounces plain low-fat, sugar-free yogurt
  • 1/3 cup wheat germ
  • 3 Tablespoons white wine vinegar
  • 1 Tablespoons Dijon mustard
  • 1/8 teaspoons black pepper
  • 1 cup chicken breast, cooked and diced
  • 3/4 cup broccoli flowerets, diced
  • 1/2 cup tomato, chopped & seeded
  • 1/3 cup red onion, chopped

Preparation:

  1. Cook pasta according to package directions.
  2. In medium bowl, combine yogurt, wheat germ, vinegar, mustard, and pepper; mix well.
  3. Add pasta and remaining ingredients: toss to coat.
  4. Serve immediately or chill before serving.
  5. Sprinkle with additional wheat germ before serving.
