Chicken Kabobs

Serves 4 (8 skewers)

Ingredients

  • 1 pint button mushrooms
  • 1 onion, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 bamboo skewers, soaked in warm water
  • 1/2 cup fat-free Italian dressing

Preparation

  1. Assemble kabobs by placing mushrooms, onions, peppers, and chicken on each skewer.
  2. Brush all sides of kabobs with dressing.
  3. Grill kabobs over medium heat for about 10 minutes, turning occasionally.
