Turkey Fettuccine

Serves 2

Ingredients:

  • 2 oz Fettuccine
  • 1/3 c Light Sour Cream
  • 2 tsp All-purpose flour
  • 1/4 c Low-sodium chicken broth
  • 1/2 tsp Dried sage
  • 1/8 tsp Black pepper
  • 6 oz Turkey breast, cut into strips
  • 1/4 tsp Salt
  • 1 c Mushrooms, sliced
  • 2 Green onions, sliced
  • 1 clove minced Garlic

Preparation:

  1. Cook pasta and set aside.
  2. In a small bowl, stir flour and sour cream until smooth.
  3. Next, stir in broth until smooth. Add sage and pepper to the mixture.
  4. Preheat 8-inch greased skillet over medium-high heat.
  5. Sprinkle turkey with salt and add to skillet along with green onions, mushrooms, and garlic.
  6. Cook for about 3 minutes, while stirring, or until turkey is cooked.
  7. Combine sour cream mixture and turkey mixture in skillet while stirring.
  8. Keep stirring and cook until thickened and bubbling.
  9. Cook and stir for additional minute.
  10. Serve turkey mixture over cooked pasta.
