1 tsp canola oil4 lb leeks, trimmed, washed, and quarter, ed lengthwise1 cup chicken broth2 tbsp sugar

Preparation:

In a medium skillet with a lid, heat theoil over medium heat. Add the leeksand chicken broth and cover. Braise for 10-15 minutes, or until the leeksare tender, stirring occasionally. Remove the lid, cand ciik for 10-12minutes, until the broth has almost evaporated. Increase the heat to highand sprinkle the sugar over the leeks. Cook 10 minutes more, stirringfrequently, until the leeks are lightly carmelized.
