Blueberry Muffins Recipe

Serves 12

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3 tbsp sugar
  • 3 tbsp sugar substitute
  • 2 tsp baking powder
  • Dash of Salt
  • 1/2 tsp ground allspice
  • 1 cup fresh blueberries
  • 3/4 cup skim milk
  • 1/4 cup vegetable oil
  • 1 egg, lightly beaten
  • 1 tsp grated lemon rind
  • 1 tsp grated orange rind
  • 1 tsp vanilla extract
  • cooking spray

Preparation

  1. Preheat oven to 400 degrees.
  2. Combine flour, sugar, sugar substitute, baking power, salt, and allspice in a medium bowl. Add blueberries, and toss to coat. Make a dip with a spoon in center of flour mixture.
  3. Combine milk and next 5 ingredients and add to flour mixture. Stir until mixture in moistened.
  4. Spoon batter into muffin pans coated with cooking spray, filling each tin two-thirds full.
  5. Bake at 400 degrees for 20 to 25 minutes or until golden.
  6. Remove muffins from pans immediately, and let cool on wire racks.
