Raspberry Sorbet Recipe

Serves 12

Ingredients

  • 1 cup boiling water
  • 1 pkg. (4 servings) Raspberry Flavor Gelatin (Jell-o or otherwise)
  • 1 (6 ounce) can frozen lemonade concentrate (keep frozen)
  • 3 cups fresh raspberries
  • 1 (8 ounce) tub frozen Whipped Topping, thawed

Preparation

  1. Stir boiling water into dry gelatin mix in large bowl for at least 2 min (bowl must be freezer proof) or until gelatin is completely dissolved. Add in frozen lemonade concentrate and stir. Refrigerate mixture for 15 min or until slightly thickened.
  2. Mash raspberries into a pulp with fork in a large mixing bowl. Add to gelatin mixture along with whipped topping; stir with wire whisk until well blended, then cover.
  3. Freeze mixture for 4 hours or until solid. Remove from freezer 15 minutes before serving. Let stand for a few minutes at room temperature to soften a bit. Scoop with ice cream scoop. Store any leftover dessert in freezer container.
