1 can shoestring beets1 1/2 cup liquid beet juice, and water1/4 cup sugar, (scant) =or=- sugar sub t1/8 cup cider vinegar1 package lemon jello, (3 oz.) (sugar free)

Preparation:

Drain beets and save juice. Add water to juice to make 1 1/2 cups liquid.Put liquid in saucepan with sugar and vinegar. Bring to a boil. Pour overLemon Jello. Stir until dissolved. Add beets and mold.
