Microwavable Herbed Whitefish

Serves 4

Ingredients

  • 1/4 cup finely chopped yellow onion
  • 2 tbsp butter or margarine
  • 1/2 tsp minced garlic
  • 1 tbsp fresh lemon juice
  • 2 tsp dried parsley flakes
  • Dash of salt
  • 1/4 tsp dried tarragon
  • Dash of dried thyme
  • 1 pound fillets of whitefish or sole
  • 1/4 cup dry bread crumbs

Preparation

  1. Microwave the onion, butter and garlic in a microwave-safe dish, uncovered, on high for 1-2 minutes or until onion is partially cooked. Add the fresh lemon juice, parsley, salt, tarragon and thyme. Set aside.
  2. Arrange fish fillets in a greased 2-qt. round microwave-safe dish. Top with half of the butter and herbal mixture. Stir bread crumbs into the remaining butter mixture and sprinkle over fillets.
  3. Cover fillets and microwave on high for 4-6 minutes or until fish flakes easily with a fork.
