1 onion, chopped1 carrot, chopped1 cup white beans, uncooked1/2 tsp prepared mustard1/2 cup split peas, dried1/4 cup pearl barley1/2 cup mushrooms, chopped1 cup pinto beans, uncooked4 cup vegetable stock2 tbsp parsley, minced1/4 cup lentils, dried

Preparation:

Soak white beans and pinto beans overnight. Saute' onion, mushrooms andcarrots in 1 tablespoon of vegetable broth until tender. Add to saute'edvegetables drained beans, vegetable bouillon, mustard and parsley. Bring toboil. Reduce heat, cover and simmer 45 minutes. Add split peas, lentilsand barley.
