1 tbsp dijon-style mustard1/4 cup balsamic vinegar2 tbsp water2 tbsp fresh lemon juice1/4 tsp dried leaf tarragon1 cl garlic, minced2 tbsp safflower oil2 tbsp virgin olive oil1 salt & pepper to taste

Preparation:

In a jar, combine the mustard, vinegar, water, lemon juice, tarragon andgarlic. Shake well to combine. Add oils and shake again. Season with saltand pepper. Chili before serving. Makes about 3/4 cup. 12 servings(1-tbeach).
