Applesauce Oat Bran Muffins Recipe

Yields: 12 Muffins

Ingredients

  • 1 cup All-purpose flour
  • 1 cup Oat bran
  • 1/4 cup Packed brown sugar

  • 4 tsp Baking powder
  • 1 tsp Ground cinnamon or pumpkin pie spice
  • 1/2 cup Unsweetened applesauce
  • 1/2 cup Water
  • 1/4 cup Vegetable oil
  • 2 Large egg whites

Preparation

  1. Place flour, oat bran, brown sugar, baking powder, and cinnamon (or pumpkin pie spice) in bowl; mix well at low speed.
  2. In a separate bowl combine the applesauce, water, oil, and egg whites. Blend with a fork.
  3. Add applesauce mixture to flour mixture. Mix at medium until all flour is moistened.
  4. Pour batter into greased or lined muffin tins 1/2 full.
  5. Bake at 400 degrees Fahrenheit for about 20 minutes, or until muffins are browned.
  6. Serve hot.
