Healthy Bacon-Wrapped Asparagus

Serves 4

Ingredients

  • 4 slices Bacon (or Turkey Bacon)
  • 1 tbsp brown sugar (optional)
  • 1 lb asparagus spears (thin, not fat), trimmed

Preparation

  1. Preheat oven to 400ºF.
  2. place bacon in single layer on microwave-safe plate lined with paper towels. Microwave bacon on high for a minute and a half. Bacon should still be soft when removed. Sprinkle with sugar.
  3. Separate asparagus into 4 bunches. Wrap 1 bacon slice around each bunch, sugar-sides in. Place bundles on oven-safe baking sheet.
  4. Bake for 20 to 22 minutes or until bacon is crisp and asparagus is cooked.
