Broccoli Stir-Fry

Serves 6

Ingredients

  • 1 bunch broccoli, cut into florets
  • 3 Tbsp silvered almonds
  • 2 Tbsp soy sauce
  • 1 Tbsp dry sherry
  • 2 tsp sesame oil
  • 1 tsp sugar substitute
  • 1 Tbsp oil
  • 2 cloves garlic, minced
  • 2 tsp fresh ginger, grated

Preparation

  1. Microwave the broccoli in a covered container with a small amount of water for 3 minutes or lightly steam the broccoli.
  2. Toast the almonds in a skillet or a dry pan with a small amount of oil.
  3. Combine the soy sauce, sherry, sesame oil and sugar substitute.
  4. Heat the oil in a wok or large skillet.
  5. Stir fry the broccoli in the oil for 1 to 2 minutes or until tender, then push the broccoli to the edges of the pan.
  6. Add the garlic and ginger in the center of the pan and sauté for 30 to 60 seconds.
  7. Add the sauce and toss all the ingredients together. Top the broccoli with some almonds and serve.
