3 'Magic' Sauces

All three of these “magic” sauces take less than 5 minutes to make, but the final result is like you cooked for hours.

Ingredients

  • Mustard Horse Radish Sauce
  • Great on steak and hot or cold poached salmon.
  • 1/2 cup sour cream
  • 1 tsp Dijon mustard
  • 2-3 Tbsp prepared horse radish
  • Remoulade Sauce
  • This is one of the fastest, easiest, most useful sauces in my repertory. I use it to brighten up fish, steak, pork, vegetables, sandwiches and all sorts of dishes.
  • 1/2 cup mayonnaise with olive oil
  • 1 tsp Dijon mustard
  • 1 tsp coarse-grained mustard
  • 1 tsp white wine or cider vinegar
  • Royal Caper Sauce
  • This a wonderful quick sauce to brighten up tuna, swordfish or any baked white fish. Change the herb to tarragon or Herbs de Provence for meat or chicken.
  • 1/2 cup sour cream
  • 1 Tbsp capers, rinsed, drained and chopped
  • 1/2 small shallot, minced
  • 1 tsp fresh dill

Preparation

  1. Mix all ingredients together until smooth.
