Tomato and Olive Salad

pWith today’s tomatoes, I find using cherry, grape, tomatoes on the vine, or cocktail tomatoes still give me the old fashioned tomato flavor I like./p

li1 pint cherry, grape or cocktail tomatoes or 3 tomatoes on the vine/li
li¼ cup pitted calamata olives, sliced in half/li
li1 large shallot sliced thinly/li
li2 tbsp. lemon juice/li
li5 tbsp. olive oil/li
li1 tsp. chopped parsley/li
li1 tbsp. chopped fresh basil/li
liSalt and pepper to taste/li
li2 ounces Feta or Parmesan cheese, crumbled/li

h2HOW TO PREPARE THE RECIPE/h2

liSlice the tomatoes in half (quarters if you use cocktail tomatoes)./li
liCombine all ingredients in a bowl and let sit for 15 minutes or more before serving./li
