Almost Mac and Cheese (Made with Spaghetti Squash)

pWe all tend to miss the comfort foods of our childhood. The question I asked was whether it was really the “mac” part of this dish we missed or the gooey, creamy, cheesy part of the dish. You know that slide-down-your-throat, play-with-your-food part. One spoonful of this recipe answered that question for me and I hope for you./p
pPart of the trick with this dish is to fix it with those things you remember having years ago. Hot dogs, ham, sausage, or even tuna all work if that is how you remember Mac and Cheese. If you remember it solo, go solo!/p
pI use the eggs to thicken the sauce instead of flour. This both cuts down the carbohydrate count and makes the recipe gluten-free (if you use gluten-free cheese)./p

li2 tbsp butter/li
li1 medium shallot, chopped (or 2 scallions, white parts only, chopped)/li
li1 clove garlic, minced/li
li½ cup milk (whole works best, but reduced-fat is OK)/li
li½ tsp mustard (yellow or Dijon)/li
li8 oz cheddar or American cheese, freshly grated/li
li¼ cup Parmesan cheese, grated/li
li2 eggs/li
li2 tbsp sour cream/li
li3 cups a href="http://www.informationaboutdiabetes.com/recipes/Italian_Baked_Spaghetti_..."spaghetti squash, cooked and shredded/a/li

liPreheat oven to 350 F./li
liIn a saucepan, melt butter. Add shallot or scallions. Cook 2-3 minutes, until soft. Add garlic and stir to combine./li
liCombine milk and mustard. Slowly add to saucepan./li
liAdd cheeses, reserving some cheddar or American cheese. Stir until incorporated. Remove from heat./li
liIn a large bowl, beat eggs and sour cream together. Slowly add small amounts of cheese sauce to egg mixture./li
liPour sauce over spaghetti squash and stir to combine completely./li
liPour into a buttered, 8x8 casserole dish. Top with the reserved cheese. Bake 40-45 minutes, until casserole is browned and bubbling./li
