Cinnamon Apple Muffins

Serves 12

Ingredients

  • 1-1/4 cup oat bran cereal
  • 1 cup whole-wheat flour
  • 2 Tbsp ground cinnamon
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsweetened applesauce
  • 1/2 cup honey
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 tsp pure vanilla extract
  • 1 cup apple, peeled, cored and diced

Preparation

  1. Preheat the oven to 375 F.
  2. Coat a 12-cup muffin tin with cooking spray or vegetable oil.
  3. Mix together oat bran cereal, flour, cinnamon, baking powder, baking soda and salt.
  4. In a separate bowl, combine applesauce, honey, oil, egg and vanilla.
  5. Combine mixtures. Stir in apple.
  6. Fill in the prepared muffin cups. Bake about 15-20 minutes.
