Breaded Catfish

Serves 4

Ingredients

  • Nonstick cooking spray
  • 1/3 cup all-purpose flour
  • 1/2 cup egg substitute
  • 1/2 tsp dried thyme
  • 1/2 tsp salt (optional)
  • 1/4 tsp ground black pepper
  • 1/2 cup whole-wheat bread crumbs
  • 4 4-oz catfish fillets

Preparation

  1. Preheat oven to 350°F.
  2. Place flour in a shallow dish. Place egg substitute in another shallow dish. Add thyme, salt (optional), and pepper to bread crumbs and place in a third shallow dish.
  3. Dredge one fillet in flour, coating all sides. Dip into egg substitute and roll in bread crumb mixture, coating well. Repeat for remaining three fillets.
  4. Coat a baking dish with cooking spray and line the bottom of pan with prepared fillets. Spray each fillet with more cooking spray. Bake for 25 minutes.
