No-Bake Rocky Road Oat Clusters
Yields 48 clusters
Ingredients
- 2 cups (6 ounces) quick oats, dry
- 1/4 cup (1 ounce) chopped pecans
- 2/3 cup nonfat dry milk powder
- 1 (85-gram) pkg dry, sugar-free, cook-and-serve chocolate pudding mix
- 1 cup water
- 1 tsp vanilla extract
- 1/2 cup (1 ounce) miniature marshmallows
Preparation
- Combine oats and pecans in a large bowl. Set aside.
- Combine milk powder, pudding mix, and water in a medium saucepan. Cook over medium heat until thick, stirring constantly. Remove from heat.
- Add vanilla extract and marshmallows. Stir until marshmallows have melted.
- Pour pudding mixture over oat mixture. Mix well until blended. Drop by teaspoonful onto waxed paper or parchment paper, forming 48 clusters. Let set until firm. Refrigerate in tightly covered container.
