Scrambled Eggs with Sausage

Serves 2

Ingredients

  • 2 eggs
  • Pinch of ground black pepper
  • 2 tbsp reduced-sodium chicken broth
  • 1 oz turkey sausage, cooked and sliced
  • 1/4 cup cherry tomatoes, quartered
  • 1 tbsp finely shredded reduced-fat cheddar cheese
  • 1 whole-grain English muffin, halved and toasted

Preparation

  1. Preheat a large skillet over medium heat.
  2. Beat together eggs, black pepper and broth. Mix in cooked sausage.
  3. Pour the mixture into the hot skillet. Cook on medium heat until the eggs are almost set.
  4. Add in tomatoes and cheese. Cook 1 more minute or until the eggs are completely cooked.
  5. Serve on the toasted English muffins.
