Sweet Potato Bites

Serves 6

Ingredients

  • 1 pound sweet potato, cut into 1/4-inch-thick slices
  • 3 Tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup shredded sharp cheddar cheese
  • 6 slices bacon, cooked crisp and crumbled
  • 1/3 cup sour cream
  • 2 green onions, chopped

Preparation

  1. Preheat the oven to 400 F.
  2. In a large bowl, combine the sweet potato slices, olive oil, salt and pepper; toss until evenly coated.
  3. Line a baking sheet on a pan and line the sweet potatoes in a single layer and bake on the top rack for 25 minutes.
  4. After baking, top each potato with the cheese, bacon, sour cream and green onions.
