Strawberry-Cucumber Lettuce Wraps

Serves 12

Ingredients

  • 2 tbsp seasoned rice vinegar
  • 1 tbsp olive oil
  • 1 1/2 tsp Dijon mustard
  • 1 tsp poppy seeds
  • 1/2 tsp pepper
  • 1 1/4 cups finely chopped seedless cucumber
  • 1 1/4 cups finely chopped celery
  • 1 cup finely chopped radishes
  • 1 1/2 cups chopped fresh strawberries
  • 1/2 cup chopped pecans, toasted
  • 1/4 cup snipped fresh basil
  • 24 butterhead (Boston or bibb) or green leaf lettuce leaves
  • 2 oz goat cheese, crumbled
  • Fresh basil sprigs (optional)

Preparation

  1. Whisk together vinegar, oil, mustard, poppy seeds and pepper in a large bowl.
  2. Add cucumber, celery and radishes, then stir with a large spoon to coat.
  3. Add strawberries, pecans and snipped basil, then stir.
  4. Add about 1/4 cup strawberry salad to each lettuce leaf, then top with 1 tsp goat cheese. Garnish with basil sprigs if desired. Serve immediately.
