Zucchini-Crust Pizza Bake

Serves 6

Ingredients

  • 1 cup grated zucchini
  • 1 egg, beaten
  • 2 ounces reduced-fat, shredded mozzarella cheese, divided
  • 3/4 cup no-salt-added tomato sauce
  • 1/2 tsp minced garlic
  • 1/4 tsp dried oregano
  • 1/2 cup mushrooms
  • 1/2 cup green peppers
  • 1/2 cup diced tomatoes
  • 2 Tbsp grated Parmesan cheese

Preparation

  1. Preheat oven to 400 F. Spray an 8x8 baking dish with cooking spray.
  2. Dry out zucchini as much as possible by patting with paper towel.
  3. Combine zucchini, egg, and 1/2 ounce of mozzarella. Place into baking dish. Bake for 10 minutes.
  4. Combine tomato sauce, garlic and oregano.
  5. Spray a pan with cooking spray. Over medium heat, saute mushrooms, green peppers, and tomatoes.
  6. After zucchini crust is done baking, spread tomato sauce over the top. Add pizza toppings and then sprinkle remaining cheeses on top. Bake for 25-30 minutes.
