Veggie Pizza with Oat-Flax Crust

Serves 1

Ingredients

  • Crust:
  • 1/4 cup dry oats
  • 1 Tbsp ground flax seed
  • 1 egg
  • Toppings:
  • 1/2 cup non-fat or low-fat cottage cheese
  • 4 Tbsp marinara or spaghetti sauce
  • 1/2 cup chopped tomato
  • Frozen spinach, thawed and patted dry
  • Other vegetables of choice (mushrooms, onions, olives, jalapeno, etc.), chopped

Preparation

  1. Preheat the oven to 350 F.
  2. In a round tin pan, mix the crust ingredients together, then cover the bottom of the pan with the dough. Bake for 15-20 minutes or until the crust is firm.
  3. Using paper towels, soak any water out of the cottage cheese so it's as dry as possible (and won't make the pizza crust soggy).
  4. Spread the marinara or spaghetti sauce onto the firm crust, then top with cottage cheese, tomato, spinach and desired vegetables. Place the pizza back into the oven for another 15-20 minutes. (For crispier crust, increase the oven temperature to 375 F.)
