Zucchini and Pepper Stir-Fry

Serves 8

Ingredients

  • 1 Tbsp vegetable oil
  • 2 cup zucchini, chopped
  • 2 cup green or red bell peppers, chopped
  • 1 cup onion, chopped
  • 2 tsp soy sauce
  • 1/2 tsp garlic powder

Preparation

  1. In a large skillet, heat the oil. Add the zucchini, peppers, and onions into the skillet.
  2. Over medium-high heat, cook the veggies until they are lightly brown, for about 4 to 6 minutes, stirring occasionally.
  3. Season the vegetables with the soy sauce and garlic powder and let it cook for another 2 minutes, stirring occasionally.
