Veggie Quinoa Bites

Serves 7

Ingredients

  • 16 ounces frozen broccoli florets, chopped
  • 12 ounces frozen cauliflower florets
  • 3 eggs, beaten
  • 1/2 cup shredded mozzarella cheese
  • 2/3 cup grated Parmesan cheese
  • 1/2 cup cooked quinoa
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

  1. Preheat the oven to 350 F.
  2. Steam the broccoli florets, then set aside to cool.
  3. Steam the cauliflower florets, then add them to a food processor and pulse until crumbled. Set aside to cool.
  4. Combine the remaining ingredients in a large bowl. Add the broccoli and cauliflower, then mix well.
  5. Spray a mini muffin pan with cooking spray, then press the mixture into the muffin cups, filling them up. Bake for 15 to 20 minutes or until golden. Repeat with remaining mixture (makes 3 1/2 dozen).
