Creamy Sweet Potato Soup

Serves 6

Ingredients

  • 2 tsp oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tsp mild curry powder
  • 1 pound sweet potatoes, peeled and chopped
  • 2 cups water
  • 1 vegetable stock cube, crumbled
  • 1 1/2 cups soy milk

Preparation

  1. In a large saucepan, heat the oil. Add the garlic, onion and curry powder; saute until soft.
  2. Add the potatoes, water and stock cube. Cover the pan; simmer for 15 minutes or until the vegetables are cooked. Allow to cool.
  3. Add the mixture to a blender of food processor; blend or process until smooth. Gradually add the soy milk; continue blending or processing until well combined.
  4. Return the mixture to the saucepan; heat through, being careful not to boil the soup.
