Shrimp Spaghetti Squash Alfredo

pOne of the new items I discovered Spaghetti squash. I thought that it would be a substitute for the real thing. It isn’t! BUT It can be treated in a similar manner. /p
pUnlike acorn or butternut squash it is low in carbohydrates. But meatballs and spaghetti squash is one of my great failures. This lower carbohydrate take on a classic shrimp dish is a real crowd pleaser. The spaghetti squash portion can be prepared hours or even a day before, making this an quick and elegant meal./p

li2 cups cooked spaghetti squash (directions below)/li
li2 tbsp. Butter/li
li1 large shallot sliced thinly or 3 scallions sliced thinly/li
li1 clove grated garlic/li
li6 medium Baby Bella or crimini mushrooms, sliced thickly/li
liSalt and pepper to taste (and your doctor’s advice)/li
li3/4 cup Half and Half (whole milk can be substituted)/li
li2 tsp. fresh dill/li
li1 tbsp. fresh parsley/li
liPinch of nutmeg/li
li1 pound raw shrimp (16-20 count)/li
li2 tbsp. parmesan cheese/li

h2HOW TO PREPARE THE RECIPE/h2
ol
liPreheat oven to 350°./li
liCut squash in half lengthwise. (I USE A CLEAVER AND HAMMER.)/li
liScrape out the seeds and pith. Sprinkle with salt and pepper./li
liPlace cut side down on a baking sheet lined with foil and sprayed with a release agent./li
liBake for 30 minutes. Let cool for ½ hour./li
liUsing a fork, scrape the meat of the squash into a bowl and set aside./li
liMelt the butter in a large skillet./li
liAdd the shallot and cook for 30 seconds, add garlic and cook for 30 seconds more./li
liAdd the sliced mushrooms. Cook just until they have absorbed the butter in the pan./li
liAdd salt and pepper. Add the half and half (or milk). Cook for 2-3 minutes until the half and half comes to a simmer./li
liAdd the dill, parsley, and nutmeg. Stir to combine./li
liAdd the cooked spaghetti squash and warm through./li
liAdd the shrimp and cook until it turns pink on one side./li
liTurn the shrimp over and add the Parmesan cheese and heat through./li
