Asian-Marinated Salmon

Serves 4

Ingredients

  • 4 (6-ounce) wild or Alaskan salmon steaks
  • 1/2 cup reduced-sodium soy sauce
  • 1/4 cup orange juice
  • 2 Tbsp chopped garlic
  • 2 tsp Dijon mustard
  • 2 tsp tomato paste
  • 1/2 lemon, juiced

Preparation

  1. Put the salmon in a large, sealable bag.
  2. In a small bowl, combine the soy sauce, orange juice, garlic, mustard, tomato paste and lemon juice.
  3. Pour the marinade over the salmon. Seal the bag, removing any excess air, then place it in the refrigerator for about 5 hours.
  4. Prepare a grill. Transfer the salmon from the bag to the grill, reserving the marinade. Cook the salmon for about 5 minutes on each side, lightly drizzling with a few tablespoons of the marinade during grilling.
