Smoked Salmon, Cucumber and Avocado Sandwiches

Serves 4

Ingredients

  • 1 Tbsp reduced-fat mayonnaise
  • 1/2 tsp lemon juice
  • 1/8 tsp black pepper
  • 8 slices thin, wheat bread
  • 2 ounces smoked salmon, thinly sliced
  • 1 ripe avocado, peeled, pitted and sliced
  • 12 thin slices cucumber

Preparation

  1. In a small bowl, combine mayonnaise, lemon juice and pepper.
  2. Spread a thin layer of the mayo mixture onto four slices of bread. Add salmon, avocado and cucumber, then top with a second slice of bread to make a sandwich.
