Greek Chickpea Salad

Serves 4

Ingredients

  • Salad:
  • 1 (15-ounce) can chickpeas (garbanzo beans), drained and rinsed
  • 1/2 cup diced English cucumber
  • 1/2 cup diced Roma tomatoes
  • 1/2 cup diced red bell pepper
  • 1/8 cup finely chopped red onion
  • 1/8 cup sliced black olives
  • 1/8 cup chopped flat-leaf parsley
  • 2 ounces reduced-fat feta cheese, crumbled
  • Dressing:
  • 1/2 Tbsp lemon juice
  • 1/2 Tbsp red wine vinegar
  • 1/4 tsp chopped garlic
  • 1 Tbsp plain low-fat Greek yogurt
  • Pinch of salt and pepper
  • Pinch of stevia (optional)
  • Preparation

  1. Combine the salad ingredients in a medium bowl.
  2. Add the dressing ingredients to a shaker or water bottle, then shake it to mix.
  3. Pour the dressing over the salad, then toss to coat. Serve immediately or chill in the fridge for about an hour.
